Pickles are something which can be eaten along with Chiura (Beaten rice) and pickles work as great combination with rice as well. There are various kinds of achar and every achar is special and tasty. Pickles can be made with vegetables and also with mutton and chicken. Chicken pickle simply tastes amazing. Achar can be made in large quantity but, especially the Chicken achar will not last for long as it gets eaten very quickly. The recipe requires chicken which should be totally boneless and the process is quite simple. INGREDIENTS FOR MASU KO ACHAR (MUTTOMN PICKEL) : 1. Boneless meat/chicken breast cut into small cubes - 500g 2. Garlic - 30g 3. Ginger - 10g 4. Cumin seeds - 5g 5. Coriander seeds - 5g 6. Fenugreek seeds - 5g 7. Pepper corns - 5g 8. Mustard seeds - 5g 9. Fennel seeds - 5g 10. Salt - 12g 11. Red chilli powder - 5g 12. Oil - 100 ml 13. Imli sauce (titiri in Nepali) - 85 ml (boil imli in hot water. After it thickens, extract the sauce. NOTES 1. If oil appears to be less then heat oil as per your requirement and add it to the pickle. 2. Store the mutton pickle in the refrigerator. 3. The pickle can last fresh for about 3 months. 4. Be careful while the masala is getting cooked as cooking on high flame may burn the masala.
